I do most of my Visual Studio 2008 and now SQL Server 2008 development in a virtual environment on a MacBook Pro running VMware Fusion. I have been very happy with the experience, but your mileage may vary depending on your tools and needs.
I ran across a situation last night for the first time in VMware Fusion - mounting the ISO Disk Image of SQL Server 2008 for installation. Up until this time I have had all the DVD's for installing my software, but given SQL Server 2008 is so new I only had the ISO Disk Image. I suspected VMware Fusion had an easy way to mount an ISO File as a drive and of course it does :)
From the Virtual Machine Menu Option in VMware Fusion you can choose the CD/DVD submenu and specify an ISO File as your drive.

When you select Choose Disk Image... you can point it to your ISO File and the disk image will be mounted just like the DVD or CD. It may not autorun, so to get the disk image to autorun just choose disconnect and then connect which will cause it to autorun if it didn't before. Cool stuff!
